Indeed.  Even with a nice of 5 it'll lock up.  I'm trying 10 now.

I wonder what would happen if I move it into a ram drive.

It's definitely dependant on the disk access of other software though.
 I had it happen to me once more when I was switching virtual
desktops.. it did some normal drive grinding and then got locked up
doing disk operations.

I still think it's the encfs + muby combination doing it somehow.
